- 200 g cherry tomatoes halved
- 2 handfuls fresh spinach approx 50g
- 1 tsp sambal oelek or chili paste
- 1 tbsp fish stock concentrate
- 100 ml freshly grated Parmesan approx 40g
- some lemon balm for garnish
Instructions
- Prepare the ingredients. Cook pasta in salted water according to package directions, minus 1 minute
- Melt butter in a pan. Sauté shallot, onion, and garlic until soft.Stir in flour, then add wine. Let it bubble for a minute.
- Pour in cream and simmer until slightly thickened.Add tomatoes, spinach, lemon juice, sambal, and fish stock. Stir well.Mix in Parmesan until creamy.
