This healthy Chicken Tikka Masala with Coconut Milk is a favorite Indian dish with a rich creamy tomato curry sauce, filled with bold spices and lots of flavors.
Lightly toast the almond chips, careful not to burn them. Place in a blender jar.
Roughly chop red onion, garlic and ginger and fry over medium heat in butter, place in the blender jar.
Add almond shavings, garam masala, paprika, Ancho, sambal oelek, coarsely chopped tomatoes and tomato puree, mix together to a batter.
Shred the chicken fillets and fry them in butter and a little oil on high heat.Scrape out the blender jar and let the tomato mixture fry together a minute
Pour in the coconut milk, mix and let simmer for a few minutes until the chicken is completely cooked through.
Taste with salt and pepper and possibly a little more sambal oelek if you want the spiciness.
Garnish with fresh, chopped coriander and serve with rice and naan bread.Cuisine is crazy good
