These Oven Roasted Leek Potato's are a super healthy and budget-friendly recipe that can be paired with all your favorite meals! This is a really simple but yet delicious side.
Preheat oven to 225 °CPeel potatoes and slices them into stripes/halves or cut into 1 cm cubes and add to a bowl. Add olive oil, salt, and black pepper. Mix well and add to a baking dish. Start with just the potatoes. Bake in the oven at 225° for 25 minutes.Take out and turn several times during cooking and lower the heat if it starts to get too much color.Thoroughly wash leeks and finely slicing using white and light green part of the leeks only. Add leeks to the baking dish and blend with the potatoes. Bake additional 15 minutes and turn a couple of times during cooking.Remove and serve hot with your favorite meat/poultry dish.
